La Herencia® Crispy Tongue Tacos

Serves: 3 to 4
Time to prep: 7 to 8 hours

1 La Herencia beef tongue

½ white onion, peeled

5 whole garlic cloves

1 Tbsp. kosher salt

1 tsp. whole black peppercorns

8 to 10 cups water


Fresh Tomato Salsa

½ cup white onion, diced

6 Roma tomatoes, diced

1 lime, juiced

1 Serrano chile, minced

1 Tbsp. cilantro, chopped

salt to taste

2 Tbsp. vegetable oil

2 to 3 dozen fresh corn tortillas, 4” diameter

  1. Place tongue in crockpot with onion, garlic, salt and pepper and cover with water. Cover crockpot andcook on high until boiling, lower heat, and allow to cook on low for 7 to 8 hours until very tender. Discard liquid. Remove skin. Shred meat into bite size strips. This can be prepared in advance.
  2. Prepare salsa by mixing all ingredients in a bowl until combined.
  3. To prepare tacos, heat a small amount of oil in skillet over medium heat. Add shredded tongue and let cook until crispy and browned. Flip shredded meat over and let other side to cook until crip.
  4. Warm tortillas, fill with shredded meat, and top with fresh salsa. Enjoy!
